    GENERAL CLIMATE CONDITIONS
    OF COLCHAGUA VALLEY
    Apalta is located at 170 Kilometers South West of Santiago in the Colchagua
    Valley. The Vineyard is situated on a North to South exposure, which is quite
    rare in Chile. The Tinguiririca river rests on one side and the hills from the
    Coastal Cordillera surround the vineyard like a horseshoe on the other and are
    both integral in forming this unique terroir. This geography is responsible for the
    conditions that ensure balance for our vines and a slow ripening for the grapes.
    At sunrise and sunset, the Cordillera block the sun’s rays, limiting the vines
    exposure to intense sunshine and the river has a cooling influence on the climate
    Apalta has special meso-climate that is different from the rest of Colchagua Valley.
    Its climate could be described as Semi-dry Mediterranean; with a winter only rainy
    season and a long dry summer season. Rains are highly concentrated during the
    winter reaching over 700 mm in on average. During the growing season (Oct-April),
    we have beautiful days and warm temperatures with no rain due to the height of
    the Coastal Mountains, which partially block the cold influence of the Pacific Ocean.
    There are cool breezes in the afternoons and the night-time temperatures are cold.
    We benefit from a wide temperature fluctuation between night and day; which is a
    key quality factor for color and tannins in our red wines. Slow maturation allows
    the grapes to reach their ideal maturity with high concentration and character,
    preserving the fruit and high levels of natural acidity, ensuring a long ageing
    potential

     

    THE SOIL
    The soil in our parcel of old Cabernet Sauvignon is of colluvial origin, with a high
    proportion of granite and quartz. It has a deep, but very poor top-soil, with very
    good drainage and a low capacity of water retention. The old vines show an
    excellent balance and a very deep root system.

     

    VINTAGE CONDITIONS IN 2009
    2009 vintage had a winter with more rain than average seasons with a total rainfall
    of 730 mm. Conditions during spring were great so bud breaking was from 10 to
    15 days earlier in Apalta than previous years. Spring was very dry with just 19
    mm of rainfall within this 3 month allowing nice flowering conditions. Summer had
    high maximum temperatures with windy and cool nights, which let grapes ripe very
    fast, letting us start harvest several days before regular date but also showing and
    amazing potential for making high quality wines.

     

    WINEMAKING
    Our Cabernet Sauvignon comes from an old block of Cabernet: planted in 1920
    with high density in special soil and geographic conditions. Our winemaking
    philosophy remains very natural and we adhere to minimal intervention. Our key
    points are 100% hand harvesting, strict fruit selection by optical state of the art
    grape selection, ans specially this 2009 vintage we did gentle extraction methods
    and a judicious use of oak to preserve the fruit but integrate the complexity
    that a wine of this quality deserves. There is no stabilization, no clarification and
    a very light filtration prior to bottling. The 2009 vintage brought us very good
    structure and fruit concentration on this exceptional Cabernet Sauvignon.

     

    TASTING NOTES
    Color: Brilliant dark ruby red color with deep purple shade.
    Nose: Intense nose with red fruit aromas and dry tea leaves, followed by subtle
    sweet spices.

     

    Palate: Very concentrated structure with very ripe, juicy and polished tannins,
    round mid palate with a long and pleasant finish.
    Service and Food Pairing: Ready to drink now or cellar for several years.
    Decant and serve at 16-18°C (60 to 65°F). Ideal companion for meats and
    elaborate dishes.

    Grape Variety: 85% Cabernet Sauvignon; 15% Carmenère.

    Management: Organic and Biodynamic vineyard management
    under process of certification by Ceres (Germany).
    High density plantation: 5.400 to 6.666 pl/hectare.
    Non grafted vines, masal selection.
    Yields: Average 4.500 Kg/he – or 1,8 Tons/acre.
    Leaf removal and green harvest to fine tune yields.
    Vertical trellis system with double guyot pruning.
    100% hand harvested in small cases of 15 kilos.
    Harvested from the 14th until the 24th of March 2009.

     

    WINEMAKING
    Grapes Selection: 95% Cluster selection by hand and optic berries
    selection by Vistalys.
    5% Hand destemming.
    Fermentation: 100% Wild yeast.
    Fermentation in stainless steel tanks. Skin contact up
    to 4 - 5 weeks.

     

    AGEING
    Ageing: 100% of the blend in 225L French oak for 12 months.
    Barrel use: Barrel use: 43% in new French oak. 57%
    in used French oak (2nd and 3rd use).
    Coopers: Saury, Sylvain, Radoux, Seguin Moreau, Demptos and Taransaud. Medium Toast
    and Medium Toast +
    Fining
    and filtering: Not fined or cold stabilized.
    Light plate sheet filtration only before bottling.

     

    PRODUCTION
    Date of Bottling: From July 2010
    Cases produced: 17.020 cases of 12 bottles 0,75 lts.

    2. 上海地区会员指定地铁站取货(内环以内地铁站)
    会员可以指定在内环以内的地铁站取货,工作人员先和你确定取货时间和货物数量、金额,然后会在指定时间和指定地铁站出口等待会员。美食记不收取会员物流费用。目前美食记只在周六、周日或者节假日送货。

    3. 会员上门取货
    会员可以在指定时间内到美食记精品团购指定取货地点提取货物,没有物流费用。工作人员会确认具体取货时间和地点。

    4. 送货上门
    根据距离的远近和货物的数量,收取一定的费用,工作人员会和会员确认物流费用和送货时间等。
